• When we think of a fragrant sandwich with prosciutto, it seems impossible that the origins of this seemingly modern delicacy could date all the way back to the time of the Etruscans. Yet, the history of prosciutto is ancient and steeped in tradition. It was in the Middle Ages, for example, that Tuscany began to refine the art of preserving and curing meat. The time of year when pigs were slaughtered was not just work, but also—above all—a celebration.
